BEEF Bolar Roast

A lean, economical roasting cut from the shoulder with good flavour and very little waste. Bolar rewards a low, slow cook that breaks down the connective tissue — treat it as a pot roast rather than a fast oven roast. Brown it well, then roast covered at 160°C with a little stock for 2½–3 hours, until it pulls apart easily. It will happily take longer and slower still if you have the time — the longer it goes, the more tender it gets. Rest before carving against the grain.
