BEEF Eye Fillet Roast

The most elegant roasting cut in the cabinet — incredibly tender, fine-grained and virtually fat-free. Have it plain, or with a seeded mustard crust, a mustard and horseradish crust, or wrapped in prosciutto. Everything except the mustard and horseradish crust is gluten free. Roast at 180°C for 45–50 minutes for medium-rare, then rest generously before carving. Roasts vary in size, so ask us for a cooking time matched to the weight you've chosen.
