South Australian Gummy Shark, Flake (Mustelus antarcticus) have sweet and delicious flesh, and are popular for their boneless and thick flakes. Flake is commonly used for the traditional “fish and chips” but should not be overlooked for barbecuing, poaching, braising and baking.
