Diced free range chicken thigh in a rich, nut free satay sauce with diced vegetables and fresh coriander — all the depth of a satay without the peanuts. Thigh rather than breast, so it stays tender and more moist through a longer cook. Place into an oven tray or casserole dish and bake covered at 180°C for 1 hour 30 minutes, stirring once, then serve over steamed rice with a squeeze of lime — or, if nuts aren't a concern in your household, stir through a spoonful of peanut butter for an enhanced peanut flavour.
