A robust everyday steak from the rump — leaner than scotch fillet, with a firmer texture and a rich, savoury depth that stands up to a hot grill. Aged for tenderness and enhanced flavour. Best cooked hot and fast: 3–4 minutes each side for medium-rare, then rested for as long as it cooked. One of the best value steaks in the cabinet. Gluten free.
